Restaurant Operations

Restaurant operations need systems.

“A system is a set of things, actions, ideas, and information that interact with each other, and in so doing, alter other systems,” ~ Michael E Gerber, The E-Myth Revisited

There is a myth among independent restaurateurs. It goes something like this: “Chain restaurants are successful because they have systems.” But the reality is chain restaurants are successful because they use systems every day.

Law #2, Operations: every aspect of the business is systematized to efficiently and effectively meet stated goals through policies, procedures, and measure performance.

The law is straightforward. It doesn’t say, “It’s a good idea to systematize,” or “You might consider planning.” It says the business IS systematized with stated goals and measurement. We can’t be successful without focusing on every operational detail.

Restaurant operations is the sweet spot for most restaurateurs — our fall back place. We know how to cook, serve guests, clean, count the drawer, we can do it all. Remember, as leaders, we work at personal growth and development to¬†create successful restaurant operations. We hold ourselves and our associates accountable.

I know you work hard.

I’ve spent those days on the floor, doing the drawer, taking the inventory, faxing the orders and cleaning the walk-in and scrubbing toilets too. I don’t do those things any more and, as the successful leader of your restaurant operation, you shouldn’t either. Success requires you to build, maintain and refine restaurant operations¬†systems to maximize your time and effort.

Do you have job descriptions for every position? Training manuals? A performance evaluation system? Hiring protocol? Are you saying, “Wait, I’m just one location?” I was too. But, through self leadership and development of these systems and more, by making operations systems a priority, I was able to focus exclusively ON my restaurant and stop working IN my restaurant.

With successful restaurant operations systems, and using them every day, I was able to quadruple my locations and eight-fold my revenues!

You can do this too and, it’s not rocket science. In fact, the great thing is, much of it is done already and with existing resources you can customize to your operation, you’ll be systematized in no time. Put restaurant operations systems development on your calendar.
